guess what? christmas is coming up and i'm super excited for the absolut best time of the year!

the house is already looking very festive and cosy and now it was about time to finally start the biscuit or as we call them in german "plätzchen" baking.

my mom and i are spending a lot of time each year to bake many different ones. so this year i decided to share two of my favourites on here!

and to be honest here, as much as i love baking i absolutely suck at it hahaaaa :(

unfortunately these are no vegan recipes but 100% tasty for all the non vegans out there!

marzipan kipferl




ingredients for 40 piece

250 gr marzipan paste
120 gr sugar
1 egg white
1/2 teaspoon grated lemon rind
a few drops of bitter almond aroma
80 gr dark chocolate coverture

these are really chewy ones, so if you like that AND marzipan, then they are perfect for you

mix all ingredients together until you get a smooth dough.
it was very hard work to get the dough really smooth with only a hand mixer. it's best to use the dough hooks for that.

preheat the oven of 180° celsius (air circulation 160°).

now it comes to the sticky part. you'll need to form little ovally shaped "kipferl". it works best with wet fingers.

once you're done with shaping, put them in the oven and leave them in for about 15 minutes.

when the 15 minutes are over and you're taking the kipferl out the oven you'll now need to let them cool down. while they're cooling down you can start melting the chocolate coverture in a water bath.

once the kipferl are not warm anymore and the chocolate is molten you'll need to dunk the tips of the biscuits in the chocolate and then lay them besides and let the chocolate dry.

jam rings



ingredients

500 gr butter
380 gr sugar
3 eggs
1/2 grated lemon rind
750 gr flour
2 tablespoons of baking powder
jam of your choice (i used wildberry and rosehip)
icing sugar

first put the butter and the sugar together and beat until its fluffy then add the eggs and the lemon rind. 
now mix the flour with the baking powder and then you'll need to stiff these both and add them to the other mixture. mix it all until you get a nice dough. you'll then need to put the dough in a cool place for about an hour.

after that hour you'll need to roll the dough thin and start to cut out the biscuits. once your done with that you'll need to take a smaller cutter and start cutting out even smaller bits out of half of the total biscuits. you know what i mean? so basically you have a ring which you can later put on top of the other part without the cut out.

now bake them in the oven at 200° for about 10 minutes.

start putting jam on the biscuits without the cutout then put a ring on top. there you go, they now should look like in the picture above.

what i've done before i've put the wee rings on top is that i've powders some of the icing sugar on top. you don't need to do this but i think it looks lovely and tastes very good too!
